Ingredients

  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced bell peppers (any color)
  • 1/2 cup diced onion
  • 1 cup cooked and crumbled breakfast sausage or diced ham (optional)
  • 6 large flour tortillas
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Salsa or hot sauce (optional, for serving)

Instructions

  • In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers, and sauté until softened, about 5-7 minutes.
  • If using, add the cooked sausage or ham to the skillet and cook for an additional 2-3 minutes.
  • Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are fully cooked, about 5-7 minutes.
  • Remove the skillet from heat and stir in the shredded cheese until melted.
  • Lay out the flour tortillas on a clean surface. Divide the egg mixture evenly among the tortillas.
  • Fold in the sides of each tortilla and roll them up tightly to form burritos.
  • Wrap each burrito in foil or parchment paper for easy storage.
  • Store in the refrigerator for up to 5 days or freeze for longer storage.
  • To reheat, microwave for 1-2 minutes if refrigerated or 3-4 minutes if frozen.
