Healthy Tuna Quinoa Bowl

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 can (5 oz) tuna in water, drained
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 bell pepper (any color), diced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  • Rinse the quinoa under cold water in a fine mesh strainer.
  • In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil.
  • Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
  • While the quinoa cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, chop the red onion, and bell pepper, and chop the parsley.
  • In a large bowl, combine the drained tuna, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Once the quinoa is cooked, fluff it with a fork and let it cool slightly before adding it to the vegetable and tuna mixture.
  • Pour the dressing over the quinoa and tuna mixture, and toss gently to combine.
  • Serve immediately or chill in the refrigerator for a refreshing cold bowl.
