Ingredients
1 cup quinoa
2 cups water or vegetable broth
1 can (5 oz) tuna in water, drained
1/2 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, finely chopped
1/2 bell pepper (any color), diced
1/4 cup fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Instructions
Rinse the quinoa under cold water in a fine mesh strainer.
In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil.
Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
While the quinoa cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, chop the red onion, and bell pepper, and chop the parsley.
In a large bowl, combine the drained tuna, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
Once the quinoa is cooked, fluff it with a fork and let it cool slightly before adding it to the vegetable and tuna mixture.
Pour the dressing over the quinoa and tuna mixture, and toss gently to combine.
Serve immediately or chill in the refrigerator for a refreshing cold bowl.
