Ham and Vegetable Skillet Pasta

Ingredients
- 8 oz elbow macaroni or penne pasta
- 1 lb precooked ham, diced
- 1 medium onion, chopped
- 1 bell pepper (any color), sliced
- 1 cup frozen peas (or fresh if available)
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 can (14.oz) diced tomatoes (with juices)
- 1 tsp dried Italian herbs (or oregano/basil)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente, about 8-10 minutes. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sliced bell pepper, sauté until softened, about 5 minutes.
- Add minced garlic and cook for another 30 seconds until fragrant.
- Stir in diced ham and cook for 3-4 minutes to warm through.
- Pour in the canned diced tomatoes with juices, add Italian herbs, salt, and pepper. Simmer for 10 minutes to let flavors meld.
- Add the cooked pasta and frozen peas to the skillet. Toss well to combine and heat everything evenly for another 3-5 minutes.
- Serve hot, topped with grated Parmesan and fresh parsley if desired.
