Ingredients

  • 8 oz elbow macaroni or penne pasta
  • 1 lb precooked ham, diced
  • 1 medium onion, chopped
  • 1 bell pepper (any color), sliced
  • 1 cup frozen peas (or fresh if available)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 can (14.oz) diced tomatoes (with juices)
  • 1 tsp dried Italian herbs (or oregano/basil)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta until al dente, about 8-10 minutes. Drain and set aside.
  • While pasta cooks, heat olive oil in a large skillet over medium heat.
  • Add the chopped onion and sliced bell pepper, sauté until softened, about 5 minutes.
  • Add minced garlic and cook for another 30 seconds until fragrant.
  • Stir in diced ham and cook for 3-4 minutes to warm through.
  • Pour in the canned diced tomatoes with juices, add Italian herbs, salt, and pepper. Simmer for 10 minutes to let flavors meld.
  • Add the cooked pasta and frozen peas to the skillet. Toss well to combine and heat everything evenly for another 3-5 minutes.
  • Serve hot, topped with grated Parmesan and fresh parsley if desired.
