Instructions
In a medium pot, bring 2 cups of chicken broth or water to a boil.
Add 1 cup of rice to the boiling liquid, lower the heat to a simmer, cover, and cook for about 15-20 minutes (or according to package instructions) until rice is tender and the liquid is absorbed.
While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the diced chicken breast to the skillet and season with salt, pepper, paprika, and oregano.
Cook the chicken for about 5-7 minutes, stirring occasionally, until it is browned and cooked through.
Add the minced garlic to the pan and cook for an additional minute until fragrant.
Stir in the Normandy blend vegetables and cook for about 5-7 minutes until they are tender yet crisp.
Once the rice is done, fluff it with a fork and divide it into three serving bowls.
Top each bowl of rice with the chicken and vegetable mixture.
Drizzle with soy sauce or teriyaki sauce if desired.
